Blue cow cheese

Blue cow is a typical marbled cheese, made from cow's milk, which has always been produced in the alpine valleys of Piedmont. Thanks to its ripening process that is carried out strictly in fresh mountain cellars, it has an intense flavour which increases gently day after day. Its final flavour is mild and slightly spicy.

Suggested wines: Prosecco (sparkling), Barbera (red), Nebbiolo (red).
