Bra Duro PDO is a hard cheese with a sapid taste which becomes more savoury when it undergoes a ripening process of at least six months. It is obtained from the processing of raw milk which rests for at least twelve hours.

Suggested wines: Franciacorta (sparkling); Erbaluce di Caluso (white); Grignolino (red).
