Bra duro pdo
The Bra Duro DOP is a hard cheese. It has a savory taste that becomes stronger with at least six months of aging. It derives from the processing of raw milk put in outcrop for at least twelve hours. During its long ripening, it acquires its flavor and pleasant taste that characterizes it, bringing it closer to the best tradition of Italian seasoned cheese.
Pressed cheese with a hard paste, produced with cow milk. The paste is moderately firm with a yellow-ocher color to burnished, with a fragrant, spicy and savory taste. Inedible crust, hard, solid, dark gray. It is a cheese that has a cylindrical shape with a diameter that varies from 30 to 35 cm, for a total weight of about 6/8 kg. Aged for at least 180 days.
Cow milk, salt and animal rennet.

Table cheese. During the shelf-life period of the whole shape, mold may develop on the surface that can be easily removed manually with a clean brush before marketing or packaging.
