Bra tenero pdo
The Bra Tenero DOP is produced only in the narrow border of the province of Cuneo. It is processed and seasoned according to the techniques of the ancient cheese tradition of this area: this is the secret of a cheese with unique characteristics.
Pressed cheese with a soft texture, made from cow milk. The paste is ivory white to light yellow, firm and supple, with a fragrant, balanced and fruity flavor, with holes slightly spread or spread.
Cheese with inedible crust, a cylindrical shape with a diameter of 30 to 35 cm, for a total weight of about 6/8 kg. Aged at least 45 days.
Cow milk, salt and animal rennet.

Table cheese. During the shelf-life period of the whole shape, mold may develop on the surface that can be easily removed manually with a clean brush before marketing or packaging.
