The dairy factory is situated in the heart of the Piedmontese Alps, at an altitude of over 900 metres and it represents the centre of the production of the Perla “jewels”. Only here, in the high mountains, you can find the ideal conditions in which the animals are able to live and graze all year long. The fresh air, the alpine pasture grass and the handmade processing, as people used to do in past times, are a part of the cheeses which will be ready to be eaten, after a maturing period of several months. Thanks to a long time spent on carefully chosen wooden boards, our dark cellars totally immersed in the mountains and our experienced master affineurs who treat and knead our products, the cheeses are finally ready to be consumed.
